A nice layer of Fatback is left on this sweet, soft ham. Locally grown chilies, fennel, anise and lemon give a delicate spicing but it’s the quality of the pork that carries most flavour.

A bit too strong tasting for me.
Pastry could be better; not crisp and had a bitter taste. Filling too dry - needs more jelly.
