Made to the same recipe as the Stinking Bishop, but with a natural mottled coat, the colour of which will vary seasonally. The supple interior is smooth and silky, sometimes runny under the rind, with a buttery richness and a fruity flavour. Named after a 19th century Gloucestershire cider apple variety.
