This Gruyere is sweet and the flavour is perfectly balanced. There are floral, fruity notes with a silky texture and immense flavour. Cave aged for 14 months by the same family for decades. Suitable for eating and melting.

Pastry could be better; not crisp and had a bitter taste. Filling too dry - needs more jelly.
